In a medium bowl or large 4-cup measuring cup with a spout, whisk together the strawberry jello mix and 1 cup of boiling water until the jello is completely dissolved with no granules left.

Stir in the cold water, fresh lime juice, and white rum into the dissolved jello. Mix everything together really well so it's evenly blended.

Using a strawberry corer or a sharp paring knife, carefully remove the stem and hollow out a cavity in each strawberry big enough to hold the jello mixture. Trim a small slice off the bottom of each strawberry so it can stand up straight.

Using a food syringe, squirt bottle, or just a steady hand, carefully fill each hollowed strawberry with the jello mixture. Try not to spill!

Place the filled strawberries upright on a tray or dish and put them in the fridge for 2 to 3 hours so the jello can set completely.

Right before serving, roll the top of each strawberry in granulated sugar for a sweet crunch, and add a small lime wedge as garnish for that fresh daiquiri vibe. Serve chilled!
