Strawberry Flaky Puffs (Print Version)

# Ingredients:

→ For the Pastry

01 - 1 sheet puff pastry (store bought)

→ For the Strawberry Compote

02 - 1 cup strawberries, sliced
03 - 1/4 cup of sugar
04 - 1/4 cup lemon juice

→ For the Cream Filling

05 - 8 oz. cream cheese
06 - 1/3 cup sugar
07 - 1/2 cup heavy cream
08 - 2 teaspoon vanilla
09 - 1/4-1/2 teaspoon almond extract

→ For Assembly and Garnish

10 - Additional fresh strawberries, sliced
11 - Powdered sugar, for dusting

# Instructions:

01 - Preheat oven to 400°F (200°C). Prepare cookie sheet with parchment paper or a silicone baking mat.
02 - Cut one sheet of puff pastry into 6 equal pieces. Place pieces of puff pastry on the prepared pan and bake for 10-15 minutes or until puffy and golden brown.
03 - While the puff pastry is baking, add 1 cup of sliced strawberries to a medium saucepan. Add sugar and lemon juice. Heat pan over medium heat to soften fruit. Mash strawberries with a fork or potato masher. Turn heat to low and let mixture cook for 15-20 minutes until it thickens. Stir often to prevent burning.
04 - In a medium bowl, mix cream cheese and sugar until smooth, 1-2 minutes with mixer. Add heavy cream and mix until cream is incorporated and mixture fluffs up a little, 1-2 minutes. Add vanilla and almond extract and mix for another minute.
05 - When cool, slice or slit puffs in half horizontally. Use a knife or offset spatula to spread several tablespoons of cream cheese mixture on the bottom half. Layer 4-6 sliced fresh strawberries on top of the cream cheese. Spoon one to two tablespoons of strawberry compote over the strawberries. Place the top part of the puff over the strawberries.
06 - Sift powdered sugar over the top of each assembled puff. Serve immediately and enjoy.

# Notes:

01 - These Strawberry Flaky Puffs are inspired by the 1980s Drake's Pick-Em-Ups pastries.
02 - For best results, make sure your puff pastry is cold when you put it in the oven. If it gets too warm while you're working with it, place it in the refrigerator for a few minutes before baking.
03 - The strawberry compote can be made ahead of time and stored in the refrigerator for up to a week.
04 - For a quicker version, you can use strawberry jam instead of making your own compote.
