Breakfast Strawberry Oat Bars (Print Version)

# Ingredients:

→ Base

01 - 1 cup rolled oats
02 - 3/4 cup all-purpose flour
03 - 1/2 cup light brown sugar
04 - 1/2 teaspoon ground ginger
05 - Pinch of salt
06 - 8 tablespoons unsalted butter, melted

→ Filling

07 - 2 cups strawberries, small-diced
08 - 1 teaspoon cornstarch
09 - 2 tablespoons lemon juice
10 - 1 tablespoon granulated sugar

# Instructions:

01 - Preheat oven to 375°F. Line 8x8 inch pan with parchment paper.
02 - Mix oats, flour, brown sugar, ginger and salt. Add melted butter and combine well.
03 - Reserve 1/2 cup oat mixture. Press remaining mixture into prepared pan.
04 - Spread diced strawberries over base. Sprinkle with cornstarch, lemon juice and sugar.
05 - Crumble reserved oat mixture over strawberries. Bake 25-30 minutes until golden.
06 - Cool completely before cutting into bars.
