# Ingredients:

01 - 8 oz cream cheese, softened.
02 - 1/4 cup granulated sugar.
03 - 1 teaspoon vanilla extract.
04 - 1 cup heavy whipping cream.
05 - 1 cup fresh strawberries, diced.
06 - 2 tablespoons granulated sugar.
07 - 1 1/2 cups crushed shortbread cookies or graham crackers.
08 - 1/4 cup unsalted butter, melted.
09 - 6 large crepes or thin cake layers.
10 - Powdered sugar for dusting.

# Instructions:

01 - Beat cream cheese, sugar, and vanilla until smooth.
02 - Whip heavy cream to stiff peaks and fold into cream cheese mixture.
03 - Mix diced strawberries with sugar and let sit 10 minutes to macerate.
04 - Mix crushed cookies with melted butter until mixture resembles wet sand.
05 - Layer crepe with filling, crumbs, and strawberries. Roll tightly into sushi shape.
06 - Wrap rolls in plastic and refrigerate at least 1 hour.
