Strawberry Sugar Cookies with Sparkling Strawberry Sugar (Print Version)

# Ingredients:

01 - 1 cup (2 sticks) unsalted butter, softened.
02 - 2 large eggs, room temperature.
03 - 3 cups (375g) all-purpose flour.
04 - 2 tablespoons cornstarch.
05 - 2 teaspoons baking powder.
06 - 1 teaspoon baking soda.
07 - 2 teaspoons cream of tartar.
08 - 1/2 teaspoon salt.
09 - 1 1/2 cups (300g) granulated sugar.
10 - 6 tablespoons (36g) freeze dried strawberry powder.
11 - 1 teaspoon vanilla extract.
12 - 1 teaspoon strawberry extract.
13 - 1/2 teaspoon red gel food coloring.
14 - 1/2 cup sparkling sugar.
15 - 1 tablespoon freeze dried strawberry powder for coating.

# Instructions:

01 - Make strawberry powder by blending freeze-dried strawberries. Mix sugar coating. Line baking sheets.
02 - Cream butter and sugar. Add eggs, extracts, and coloring. Mix dry ingredients separately then combine. Don't overmix.
03 - Refrigerate dough at least 2 hours or overnight.
04 - Scoop and roll dough into balls. Coat in strawberry sparkling sugar.
05 - Bake at 350°F for 10 minutes until tops begin to set. Cool 5 minutes on pan.
