Street Corn Chicken Chili (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil.
02 - 1 onion, diced.
03 - 3-4 jalapeño peppers, seeded and diced.
04 - 6-8 ears corn on the cob, kernels removed.
05 - 6-8 cloves garlic, minced.
06 - 2 pounds ground chicken.
07 - 3 tablespoons chili powder.
08 - 2 tablespoons paprika.
09 - 1 tablespoon cumin.
10 - 4 cups chicken broth.
11 - 3/4 cup beer (optional).
12 - 1 tablespoon chicken base.
13 - Hot sauce to taste.
14 - 1 cup sour cream.
15 - 1 cup cilantro, chopped.
16 - 3 tablespoons lime juice.
17 - Cotija cheese, extra cilantro, lime wedges for garnish.

# Instructions:

01 - Cook onion, jalapeños, corn, with salt and pepper for 7-9 minutes.
02 - Add garlic, chicken, and spices. Cook 7-9 minutes, breaking up chicken.
03 - Add broth, beer, and chicken base. Boil then simmer 25-30 minutes.
04 - Stir in hot sauce, sour cream, cilantro, lime juice. Cook 5-10 minutes more.
05 - Adjust seasonings and serve with toppings.

# Notes:

01 - Beer is optional.
02 - Adjust jalapeños for heat level.
03 - Better Than Bouillon recommended for chicken base.
