→ For the Stuffed Burgers

01 - 1 lb ground beef
02 - 1 cup cheddar cheese, cubed
03 - 1 1/2 tablespoons kosher salt
04 - 1 1/2 tablespoons black pepper
05 - 1 1/2 tablespoons garlic powder
06 - Beef tallow as needed

→ For the Caramelized Onions

07 - 2 cups sliced white onions
08 - 2 tablespoons beef tallow
09 - Kosher salt to taste
10 - Black pepper to taste

→ For the Garlic Aioli

11 - 1 cup mayonnaise
12 - 1 tablespoon garlic puree
13 - 1 teaspoon lemon juice
14 - Salt and pepper to taste

→ For Assembly

15 - 6 to 8 slices bacon
16 - 6 to 8 burger buns

# Instructions:

01 - Heat your grill to medium-high heat, about 350 degrees, for direct cooking. Add a cast iron skillet to the grill 2 minutes before you're ready to cook. Melt the beef tallow in the skillet and add your thinly sliced onions. Season with salt and pepper and cook over medium heat until they're dark brown and caramelized - this takes about 45 to 60 minutes. When done, pull them off and keep warm.
02 - In a bowl, mix together the mayonnaise, garlic puree, lemon juice, and salt and pepper to taste. Put it in the fridge until you're ready to use it.
03 - Add the ground beef to a bowl along with the cubed cheddar cheese. Season with the salt, pepper, and garlic powder, then mix everything together really well. Form into 1/3 lb burger patties and put them in the fridge for 30 minutes - this helps them hold together.
04 - Heat your grill to high heat, around 400 degrees, for direct cooking. Add a cold skillet with the bacon laying flat and cook until it's rendered and crispy, about 10 to 15 minutes. Pull the bacon off but keep the skillet on the heat.
05 - Add your burger patties to the hot skillet and cook for about 8 to 10 minutes, or until they reach 165 degrees internal. The cheese cubes will melt inside creating pockets of gooey cheese. Once done, pull them off.
06 - Build each patty melt off the heat by placing a burger bun upside down, then adding bacon, garlic aioli, the burger patty, more cheese if you want, caramelized onions, and more garlic aioli. Add the assembled patty melts to the skillet and lightly press them down. Cook until the buns are crispy and toasty golden brown.
07 - Once they're perfectly crispy, serve these loaded patty melts hot and enjoy every cheesy, delicious bite!

# Notes:

01 - The cubed cheese inside the burgers creates amazing pockets of melted cheese - it's a viral trend for a reason!
02 - Caramelizing onions takes 45-60 minutes, but the deep, sweet flavor is totally worth it.
03 - You can make your own garlic puree by roasting a whole head of garlic at 400 degrees for 40 minutes, then blending with olive oil and salt.
04 - Chilling the patties for 30 minutes helps them hold together better when cooking, especially with the cheese cubes inside.
05 - Homemade garlic puree keeps in the fridge for up to 5 days, or freeze it for up to 3 months.
