Ina Garten Summer Pasta (Print Version)

# Ingredients:

01 - 1 lb fusilli or penne pasta
02 - 1/4 cup olive oil
03 - 3 cups cherry tomatoes, halved
04 - 1 cup Kalamata olives, pitted and halved
05 - 1/2 red onion, thinly sliced
06 - 2 cloves garlic, minced
07 - 1 tbsp lemon zest
08 - 1/4 cup lemon juice
09 - 1 cup fresh basil, chopped
10 - 1/2 cup fresh parsley, chopped
11 - 1 tsp salt
12 - 1/2 tsp black pepper
13 - 1/2 cup grated Parmesan cheese

# Instructions:

01 - Cook the pasta until al dente according to the package instructions. Reserve 1/2 cup of the cooking water, then drain the pasta.
02 - Heat olive oil in a pan. Sauté minced garlic for 1 minute until fragrant.
03 - In a large bowl, toss the cooked pasta with the garlic oil, cherry tomatoes, Kalamata olives, red onion, lemon zest, and lemon juice.
04 - Mix in fresh basil, parsley, salt, pepper, and reserved pasta water as needed to loosen the mixture.
05 - Sprinkle the pasta with grated Parmesan cheese and serve warm or at room temperature.
