Sun Dried Tomato Chicken Pasta (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 pound chicken breasts, cut into pieces.
03 - 1/2 teaspoon garlic powder.
04 - 1 1/2 teaspoons Italian seasoning.
05 - 1/4 teaspoon red pepper flakes.
06 - 1/2 cup shallots, diced.
07 - 2 cloves garlic, grated.
08 - 1/3 cup sun dried tomatoes, chopped.
09 - 8 ounces fusilli pasta.
10 - 2 1/2 cups chicken broth.
11 - 2 cups baby spinach.
12 - 2 ounces cream cheese.
13 - 1 cup whole milk.
14 - 1/4 cup Parmesan cheese.
15 - 1 tablespoon fresh basil, chopped.

# Instructions:

01 - Heat oil in large skillet. Add chicken, seasonings and cook 6-8 minutes until done. Remove to plate.
02 - Sauté shallots, tomatoes and garlic 2 minutes. Add broth and scrape up browned bits.
03 - Add pasta and cook 15-20 minutes until al dente. Add spinach in last minute to wilt.
04 - Stir in cheeses and milk until melted. Return chicken to pot until heated through. Top with basil.

# Notes:

01 - Stir pasta often while cooking.
02 - Make sure cream cheese is room temperature.
