Sweet Potato Marshmallow Casserole (Print Version)

# Ingredients:

01 - 3 pounds sweet potatoes.
02 - 3 tablespoons butter.
03 - 1/2 teaspoon salt.
04 - 1/2 cup orange juice.
05 - 9 ounces crushed pineapple, drained.
06 - 2.5 cups mini marshmallows.

# Instructions:

01 - Boil unpeeled sweet potatoes in a large pot for 30-40 minutes until fork-tender.
02 - Drain and cool potatoes under running water.
03 - Heat oven to 350°F.
04 - Cut potatoes and remove skins.
05 - Mix potatoes, butter, salt, and orange juice until fluffy.
06 - Fold in drained pineapple.
07 - Transfer to greased 9x13 inch pan.
08 - Bake for 20 minutes.
09 - Top with marshmallows.
10 - Bake another 5-10 minutes until marshmallows turn golden brown.
11 - Serve hot.
