Taco Bell Mexican Pizza (Print Version)

# Ingredients:

→ For the Mexican Pizzas

01 - 1 lb ground beef
02 - 1 packet taco seasoning
03 - ¾ cup water
04 - 1 cup vegetable oil for frying
05 - 8 taco-sized flour tortillas
06 - 15 oz can refried beans
07 - 10 oz can enchilada sauce
08 - 2 cups shredded Mexican cheese blend

→ For Toppings

09 - Diced tomatoes
10 - Sliced green onions
11 - Sliced black olives
12 - Sour cream

# Instructions:

01 - Turn your oven to 400 degrees. In a large skillet, brown the ground beef over medium-high heat, breaking it up into small crumbles as it cooks.
02 - Drain off the extra grease and put the beef back in the skillet. Add the taco seasoning and water, stir everything together, and bring it to a boil. Turn the heat down and let it simmer until the sauce thickens up.
03 - Heat the vegetable oil in a separate large skillet over medium heat. Add one tortilla at a time and fry for about 3 to 4 minutes, flipping it frequently, until it gets crispy and golden. Do this with all 8 tortillas and set them aside on paper towels.
04 - Put the refried beans in a microwave-safe bowl and heat them up for about a minute. This makes them way easier to spread on the tortillas.
05 - Take one fried tortilla and spread a generous layer of warm refried beans all over it. Top with a good portion of the seasoned ground beef.
06 - Place another fried tortilla on top like a sandwich. Spread about 2 tablespoons of enchilada sauce over the top tortilla, then sprinkle a handful of shredded cheese over the sauce. Repeat with the remaining pizzas.
07 - Put all the assembled pizzas on a large nonstick baking sheet. Bake for 8 to 10 minutes until the cheese is melted and bubbly.
08 - Take them out of the oven and top with diced tomatoes, sliced green onions, olives, and a dollop of sour cream. Serve hot and enjoy your homemade Taco Bell copycat.

01 - This tastes just like the Taco Bell Mexican Pizza but way better because it's homemade and fresh.
02 - The key is frying the tortillas until they're really crispy so they don't get soggy.
03 - Warming the refried beans makes them spreadable instead of clumpy.
04 - You can use ground turkey or plant-based meat instead of beef if you prefer.
05 - These are best eaten fresh, but you can prep the beef ahead of time to save time.
06 - Cut them into wedges with a pizza cutter for easier eating.
