Taco Doritos Casserole (Print Version)

# Ingredients:

→ For the Beef Mixture

01 - 1 lb lean ground beef
02 - ½ yellow onion, diced
03 - 1 tsp minced garlic
04 - 1 packet taco seasoning
05 - 12 oz bag frozen corn
06 - 14.5 oz can petite diced tomatoes with green chiles (don't drain)
07 - 1 cup black beans, drained and rinsed (optional)

→ For the Casserole

08 - 2 cups Doritos, finely crushed (like breadcrumbs)
09 - 1 cup Doritos, loosely crushed into chunks
10 - 3 cups Mexican blend shredded cheese
11 - 1 cup sour cream

→ For Topping (Optional)

12 - Sliced green onions
13 - Diced tomatoes
14 - Shredded lettuce
15 - Diced avocado
16 - Extra sour cream

# Instructions:

01 - Turn your oven to 350 degrees. Spray a 9 by 13 inch baking dish with nonstick cooking spray.
02 - Put your Doritos in a gallon zip-top bag. Crush 2 cups down really fine, almost like breadcrumbs. Leave the other cup in bigger, chunky pieces. Set both aside separately.
03 - Heat a large skillet over medium-high heat. Add the ground beef and diced onions, breaking up the meat as it cooks. Once the beef is browned all the way through, drain off any extra grease.
04 - Toss in the minced garlic and cook for one more minute, stirring so it doesn't burn.
05 - Add the frozen corn, taco seasoning, tomatoes with green chiles, and the 2 cups of finely crushed Doritos. If you're using black beans, throw them in now too. Stir everything together until well combined.
06 - Take the skillet off the heat. Stir in the sour cream and 2 cups of the shredded cheese until everything is mixed together.
07 - Pour the whole mixture into your greased casserole dish and spread it out evenly. Pop it in the oven for 5 minutes just to warm everything through.
08 - Take the dish out and sprinkle the remaining 1 cup of cheese over the top. Then scatter the loosely crushed Doritos over the cheese. Put it back in the oven for another 5 minutes until the cheese melts and gets bubbly.
09 - Take it out of the oven and let it cool for a couple minutes. Top with green onions, tomatoes, lettuce, avocado, or extra sour cream if you like. Serve hot.

# Notes:

01 - Use any flavor of Doritos you like - Nacho Cheese and Cool Ranch both work great.
02 - The finely crushed chips help bind the casserole together, while the chunky ones on top add crunch.
03 - This is a super kid-friendly dinner that most picky eaters will actually eat.
04 - You can prep the whole thing ahead and refrigerate it before baking. Just add 5 extra minutes to the cook time.
05 - Leftovers keep in the fridge for up to 3 days and reheat well in the microwave.
06 - Make it your own by adding jalapeños, bell peppers, or swapping ground turkey for beef.
