Turn your oven to 350 degrees. Spray a 9 by 13 inch baking dish with nonstick cooking spray.

Put your Doritos in a gallon zip-top bag. Crush 2 cups down really fine, almost like breadcrumbs. Leave the other cup in bigger, chunky pieces. Set both aside separately.

Heat a large skillet over medium-high heat. Add the ground beef and diced onions, breaking up the meat as it cooks. Once the beef is browned all the way through, drain off any extra grease.

Toss in the minced garlic and cook for one more minute, stirring so it doesn't burn.

Add the frozen corn, taco seasoning, tomatoes with green chiles, and the 2 cups of finely crushed Doritos. If you're using black beans, throw them in now too. Stir everything together until well combined.

Take the skillet off the heat. Stir in the sour cream and 2 cups of the shredded cheese until everything is mixed together.

Pour the whole mixture into your greased casserole dish and spread it out evenly. Pop it in the oven for 5 minutes just to warm everything through.

Take the dish out and sprinkle the remaining 1 cup of cheese over the top. Then scatter the loosely crushed Doritos over the cheese. Put it back in the oven for another 5 minutes until the cheese melts and gets bubbly.

Take it out of the oven and let it cool for a couple minutes. Top with green onions, tomatoes, lettuce, avocado, or extra sour cream if you like. Serve hot.
