Taco Stuffed Sweet Potatoes (Print Version)

# Ingredients:

01 - 1 pound lean ground beef
02 - 1 medium onion, chopped
03 - 2 cloves garlic, minced
04 - 1 packet taco seasoning
05 - 1 cup chunky salsa
06 - 1/4-1/2 cup water
07 - 4 medium sweet potatoes, about 12-14 ounces each

→ Optional Toppings

08 - Shredded Mexican blend cheese
09 - Diced tomato
10 - Diced avocado or guacamole
11 - Sour cream

# Instructions:

01 - Brown ground beef with chopped onion and garlic in a large skillet over medium-high heat. Drain excess grease, then add taco seasoning and salsa.
02 - Reduce heat to medium-low and cook for 5 minutes until thickened and heated through. Add up to 1/2 cup of water to adjust consistency.
03 - Pierce sweet potatoes with a fork and microwave on high for 8-10 minutes, turning halfway through. Continue cooking for 1-3 more minutes if not soft enough. Cool slightly, then slice lengthwise and fluff the insides with a fork.
04 - Spoon cooked taco meat over the sweet potatoes and garnish with desired toppings such as shredded cheese, diced tomato, avocado, guacamole, or sour cream.
