Thai Cucumber Salad (Print Version)

# Ingredients:

→ Salad

01 - 1 pound (500g) cucumber, peeled and cut into pieces
02 - ¼ teaspoon salt
03 - ¼ small red onion, sliced
04 - 2 tablespoons roasted peanuts, chopped
05 - 1 tablespoon cilantro, chopped

→ Dressing

06 - 2 tablespoons sugar
07 - 2 tablespoons water
08 - 4 tablespoons Thai sweet chili sauce
09 - 1 tablespoon apple cider vinegar

# Instructions:

01 - Mix cucumbers with salt and refrigerate for 10-15 minutes
02 - Combine dressing ingredients in small saucepan. Heat until slightly thickened, then let cool
03 - Drain cucumbers well. Toss with onions and dressing. Top with peanuts and cilantro

# Notes:

01 - Use firm, crisp cucumbers for best texture
02 - Can adjust sugar and vinegar to taste
03 - Add toppings just before serving to maintain crunch
