Tini's Mac & Cheese (Print Version)

# Ingredients:

01 - 1 pound cavatappi pasta.
02 - 1 pound mozzarella cheese.
03 - 1 pound Colby jack cheese.
04 - 8 ounces cheddar cheese.
05 - 1 teaspoon garlic powder.
06 - 1 teaspoon smoked paprika.
07 - 1/2 teaspoon salt.
08 - 1/2 teaspoon black pepper.
09 - 3 tablespoons butter.
10 - 3 tablespoons flour.
11 - 12 ounces evaporated milk.
12 - 2 cups heavy cream.
13 - 1 tablespoon Dijon mustard.

# Instructions:

01 - Heat oven to 350°F. Grate cheeses and mix. Combine spices.
02 - Make roux with butter, flour and spices. Add milks and mustard.
03 - Stir in half the cheese until melted.
04 - Mix pasta with sauce. Layer in dish with remaining cheese.
05 - Cook 25-30 minutes until golden.
