Turkey Wild Rice Soup (Print Version)

# Ingredients:

01 - 2 tablespoons unsalted butter.
02 - 2 tablespoons olive oil.
03 - ½ yellow onion, diced.
04 - 3 carrots, peeled and chopped.
05 - 1 rib celery, diced (optional).
06 - 1 cup dry wild rice or rice blend.
07 - ¼ teaspoon baking soda.
08 - 1 tablespoon fresh thyme leaves.
09 - ½ cup dry white wine.
10 - 4-5 cups low-sodium chicken or turkey broth.
11 - 1½ teaspoons kosher salt.
12 - ½ teaspoon black pepper.
13 - 1 cup heavy cream.
14 - 3 cups cooked turkey, chopped.

# Instructions:

01 - Heat butter and oil in Dutch oven, add vegetables and rice, cook 6-8 minutes.
02 - Stir in baking soda, thyme and wine, cook 1 minute.
03 - Add broth and seasonings, bring to boil then simmer covered 30-40 minutes.
04 - Add cream and turkey, cook uncovered 30-60 minutes until thickened.

01 - Baking soda helps cook rice faster.
02 - Can adjust thickness with broth or flour.
03 - Keeps 3-4 days refrigerated.
