Tuscan White Bean Soup (Print Version)

# Ingredients:

01 - 1 pound mild Italian sausage.
02 - 1 large yellow onion, diced.
03 - 3 ribs celery, diced.
04 - 2 large carrots, sliced.
05 - 2 teaspoons minced garlic.
06 - 1 tablespoon tomato paste.
07 - 1 teaspoon Italian seasoning.
08 - ½ teaspoon crushed red pepper.
09 - ½ teaspoon black pepper.
10 - 4 cups chicken broth.
11 - 2 cans Great Northern beans, drained.
12 - 2 cups fresh baby spinach.
13 - ½ cup heavy whipping cream.
14 - Chopped parsley for garnish.

# Instructions:

01 - Brown sausage in Dutch oven over medium-high heat, breaking up meat, 10-15 minutes.
02 - Add onions, celery, carrots and cook 3-5 minutes. Add garlic, cook 1 minute.
03 - Stir in tomato paste, Italian seasoning, and peppers.
04 - Add broth and beans. Simmer 6-7 minutes until vegetables are soft.
05 - Stir in cream and spinach. Cook until spinach wilts, about 5 minutes. Garnish with parsley.

01 - Tastes better reheated next day.
02 - Good for meal prep.
03 - Can substitute beans with any white beans.
