Winter Leek and Potato Soup (Print Version)

# Ingredients:

01 - 2 tablespoons unsalted butter.
02 - 2 leeks, cleaned and chopped.
03 - ½ cup chopped onion.
04 - 6 potatoes, peeled and cubed.
05 - 4 cups chicken broth.
06 - 1 cup half-and-half.
07 - 4 ounces shredded Cheddar cheese (optional).
08 - 1 tablespoon fresh parsley, chopped.
09 - 1 teaspoon garlic powder.
10 - Salt and black pepper to taste.

# Instructions:

01 - Melt butter and cook leeks and onion until tender, about 5 minutes.
02 - Add potatoes and broth, simmer until potatoes tender, 20-25 minutes.
03 - Stir in half-and-half and simmer until thickened, about 15 minutes.
04 - Add cheese and seasonings, cook until cheese melts, about 5 minutes.

01 - Clean leeks thoroughly.
02 - Can use vegetable broth.
03 - Cheese is optional.
