Winter Lentil Vegetable Soup (Print Version)

# Ingredients:

01 - ½ cup red or green lentils.
02 - 1 cup chopped onion.
03 - 1 stalk celery, chopped.
04 - 2 cups shredded cabbage.
05 - 1 (28 ounce) can whole peeled tomatoes, chopped.
06 - 2 cups chicken broth.
07 - 3 carrots, chopped.
08 - 1 clove garlic, crushed.
09 - 1 teaspoon salt.
10 - ½ teaspoon ground black pepper.
11 - ¼ teaspoon white sugar.
12 - ½ teaspoon dried basil.
13 - ½ teaspoon dried thyme.
14 - ¼ teaspoon curry powder.

# Instructions:

01 - Boil lentils in water for 15 minutes. Drain and rinse, return to pot.
02 - Add onion, celery, cabbage, tomatoes, broth, carrots and garlic to pot.
03 - Add salt, pepper, sugar, basil, thyme and curry powder.
04 - Cook 1½ to 2 hours until desired tenderness.

# Notes:

01 - Can be made in slow cooker 8-10 hours on Low or 4 hours on High.
02 - Can top with grated cheddar.
03 - Recipe can be doubled.
