Winter Salad (Print Version)

# Ingredients:

01 - 6 oz shredded kale.
02 - 6 oz mixed shredded vegetables.
03 - 2 medium apples, diced.
04 - 1 1/2 cups candied pecans.
05 - 4 oz crumbled goat cheese.
06 - 1 1/2 cups roasted butternut squash.
07 - 1/2 cup pomegranate arils.
08 - 1/2 cup red wine vinegar.
09 - 4 tsp whole grain mustard.
10 - 4 tsp maple syrup.
11 - 1/2 cup olive oil plus more for kale.
12 - Salt and pepper to taste.

# Instructions:

01 - Massage kale with lemon juice and oil until wilted and deep green, about 1 minute.
02 - Add shredded vegetables and diced apple to massaged kale.
03 - Shake vinegar, mustard, maple syrup, salt, pepper, and oil in jar until emulsified.
04 - Toss vegetables with dressing. Top with pecans, cheese, squash, and pomegranate.

# Notes:

01 - Can prep components ahead.
02 - Massage kale just before serving.
03 - Roast squash at 425°F for 15-20 minutes.
