Zesty Lemon White Bean Orzo Soup (Print Version)

# Ingredients:

→ Base

01 - 1 teaspoon olive oil
02 - 1 small onion, diced
03 - 2 celery stalks, diced
04 - 2 small carrots, diced
05 - 6 cloves garlic, crushed and minced

→ Main Components

06 - 2 tablespoons canned coconut milk or vegan butter
07 - 1 can cannellini beans, rinsed and drained
08 - 5 cups vegetable broth
09 - ¾ cup dry orzo

→ Seasonings & Herbs

10 - 1 teaspoon dry thyme
11 - ½ teaspoon Italian seasoning
12 - ½ teaspoon red pepper flakes
13 - 1 sprig rosemary
14 - 2 bay leaves
15 - 1 large lemon, juice and zest
16 - ¼ cup chopped parsley
17 - Salt and pepper to taste

# Instructions:

01 - Heat olive oil in large pot. Add carrots, onion, celery, and pinch of salt until softened
02 - Add garlic, then beans, coconut milk, thyme, pepper flakes, and Italian seasoning
03 - Add broth, salt, bay leaves, and rosemary. Bring to low boil
04 - Add orzo and cook 10-12 minutes
05 - Remove from heat. Add lemon juice, zest, and parsley. Remove bay leaves and rosemary. Season to taste
