Zucchini Oatmeal Cookies (Print Version)

# Ingredients:

01 - 1¼ cups plain flour.
02 - 1 teaspoon baking soda.
03 - ½ teaspoon salt.
04 - ¾ teaspoon ground cinnamon.
05 - 4 tablespoons soft butter.
06 - ½ cup packed brown sugar.
07 - ¼ cup white sugar.
08 - 1 teaspoon vanilla.
09 - 1 large egg.
10 - 1 cup fresh grated zucchini (about 2 medium).
11 - 2 cups old fashioned oats.
12 - 1 cup dark chocolate chips (60% cocoa).

# Instructions:

01 - Turn oven on to 350°F and line your cookie sheet with parchment or a baking mat.
02 - Put flour, baking soda, salt, and cinnamon in a bowl and whisk together.
03 - Beat butter with both sugars until smooth using your mixer.
04 - Mix in egg and vanilla, then stir in shredded zucchini.
05 - Add your flour mix and stir just until combined.
06 - Fold in the oats and chocolate chips.
07 - Drop spoonfuls of dough on your cookie sheet, leaving space between each.
08 - Press a few more chocolate chips on top if you want them extra chocolatey.
09 - Cook for 12-15 minutes until they turn golden.
10 - Move cookies to a wire rack and let them cool completely.

# Notes:

01 - Cookies stay fresh for 5 days in an airtight container.
02 - Use about 2 medium zucchini to get 1 cup shredded.
03 - No need to squeeze water out of zucchini.
