Apple Pie Cookies (Print Version)

Ingredients:

01 - 1 cup flour.
02 - ½ cup unsalted butter, softened.
03 - ⅓ cup sugar.
04 - 1 egg yolk.
05 - 1 tsp vanilla extract.
06 - 1 tsp cinnamon.
07 - 1 apple, peeled and diced.
08 - ¼ cup brown sugar.
09 - 1 tsp lemon juice.
10 - Caramel sauce, for drizzling.

Instructions:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a bowl, cream softened butter and sugar until fluffy. Mix in egg yolk and vanilla extract.
03 - Gradually add flour and cinnamon, mixing until a dough forms.
04 - Roll the dough into small balls and flatten them on the lined baking sheet.
05 - In a small pan, cook diced apples with brown sugar and lemon juice over medium heat until tender.
06 - Spoon the apple mixture onto the flattened dough rounds.
07 - Bake for 12-15 minutes, or until golden brown.
08 - Let the cookies cool slightly, then drizzle with caramel sauce.
