Ingredients:

01 - 1 ¾ cups all-purpose flour.
02 - ½ teaspoon baking soda.
03 - ½ teaspoon ground cinnamon.
04 - ¼ teaspoon salt.
05 - ½ cup unsalted butter, softened.
06 - ½ cup granulated sugar.
07 - ¼ cup brown sugar, packed.
08 - 1 large egg.
09 - 1 teaspoon vanilla extract.
10 - 1 cup peeled, chopped apples.
11 - 1 cup caramel bits.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
02 - In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
03 - In a separate large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
04 - Beat in the egg and vanilla extract until well combined.
05 - Gradually add the dry ingredients to the wet mixture, stirring until just combined.
06 - Fold in the chopped apples and caramel bits.
07 - Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
08 - Bake for 10-12 minutes, or until the edges are golden brown.
09 - Let the cookies cool on a wire rack before serving.
