Fruitcake Cookies (Print Version)

Ingredients:

01 - 1 cup unsalted butter, softened.
02 - 1 cup granulated sugar.
03 - 1 cup packed brown sugar.
04 - 2 large eggs.
05 - 1 tsp vanilla extract.
06 - 2 1/2 cups all-purpose flour.
07 - 1 tsp baking soda.
08 - 1/2 tsp salt.
09 - 1 cup chopped candied fruit.
10 - 1 cup chopped pecans or walnuts.
11 - 1 cup raisins.
12 - 1/2 tsp ground cinnamon.
13 - 1/4 tsp ground nutmeg.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
02 - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
03 - Beat in the eggs one at a time, followed by the vanilla extract.
04 - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the creamed mixture.
05 - Stir in the chopped candied fruit, nuts, raisins, cinnamon, and nutmeg until evenly combined.
06 - Drop the dough by rounded tablespoons onto the prepared baking sheets, spacing them slightly apart.
07 - Bake for 10-12 minutes or until the edges are lightly browned.
08 - Let the cookies cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.

Notes:

01 - These cookies are best stored in an airtight container to maintain their chewiness.
02 - Feel free to substitute pecans with walnuts or even almonds for a different nutty flavor.
