Chicken Parm Sub (Print Version)
Ingredients:

4 boneless, skinless chicken breasts.

1 cup all-purpose flour.

2 large eggs.

1 1/2 cups bread crumbs.

1 cup grated Parmesan cheese.

2 cups shredded mozzarella cheese.

1 1/2 cups marinara sauce.

4 sub rolls.

1/4 cup olive oil.

Salt and pepper, to taste.

1/2 tsp dried oregano.
Instructions:

Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper. Dredge each chicken breast in flour, dip in beaten eggs, then coat with a mixture of bread crumbs and Parmesan cheese.

Heat olive oil in a large skillet over medium heat. Cook chicken breasts for 4-5 minutes per side until golden and cooked through. Transfer to a baking sheet.

Spoon marinara sauce over each chicken breast. Top with shredded mozzarella cheese and sprinkle with dried oregano.

Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.

While chicken is baking, slice sub rolls and lightly toast them if desired.

Place the cooked chicken breasts on the toasted rolls. Spoon additional marinara sauce over the top if desired.
