Chicken Pot Pie (Print Version)

Ingredients:

01 - 1 pound cooked chicken, diced.
02 - 1 cup frozen peas and carrots.
03 - 1 cup frozen corn.
04 - 1 cup diced potatoes (pre-cooked).
05 - 1 cup chicken broth.
06 - 1 cup milk.
07 - 1 can (10.5 oz) cream of chicken soup.
08 - ½ cup mayonnaise.
09 - 1 tablespoon olive oil.
10 - 1 teaspoon dried thyme.
11 - 1 teaspoon dried parsley.
12 - Salt and pepper to taste.
13 - 1 can (16.3 oz) Grands biscuits (8 biscuits).

Instructions:

01 - Heat your oven to 375°F (190°C).
02 - In a large skillet, heat olive oil over medium heat. Add cooked chicken, frozen peas and carrots, corn, and diced potatoes. Stir to combine.
03 - In a bowl, mix chicken broth, milk, cream of chicken soup, mayonnaise, dried thyme, dried parsley, salt, and pepper. Pour this mixture over the chicken and vegetables in the skillet. Cook until the sauce is heated through.
04 - Pour the chicken mixture into a greased 9x13-inch baking dish.
05 - Arrange Grands biscuits on top of the chicken mixture.
06 - Bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
