Coconut Pineapple Bites (Print Version)

Ingredients:

01 - 1 fresh pineapple, cut into bite-sized pieces.
02 - 1 cup sweetened shredded coconut.
03 - ½ cup all-purpose flour.
04 - 2 large eggs, beaten.
05 - ¼ cup coconut milk.
06 - ¼ cup sweetened condensed milk.
07 - ¼ cup toasted coconut flakes (for garnish).
08 - ¼ cup powdered sugar (for dusting).
09 - Vegetable oil (for frying).

Instructions:

01 - In separate bowls, set up the dipping stations: one with flour, one with beaten eggs, and one with shredded coconut.
02 - Dip each pineapple piece first into the flour, then into the beaten eggs, and finally coat it with shredded coconut.
03 - Heat vegetable oil in a deep frying pan to 350°F (175°C). Fry the coconut-coated pineapple pieces in batches for 2-3 minutes per side, or until golden brown. Drain on paper towels.
04 - In a small bowl, mix coconut milk and sweetened condensed milk together. Drizzle this mixture over the fried pineapple bites.
05 - Garnish with toasted coconut flakes and dust with powdered sugar. Serve warm and enjoy!.
