Egg Sandwich (Print Version)

Ingredients:

01 - Thick-sliced brioche bread: 2 slices, for the sandwich base.
02 - Large eggs: 2, for the filling.
03 - Bacon: 5 slices, for sweet-spicy bacon topping.
04 - Brown sugar: 1/4 cup, for caramelizing the bacon.
05 - Red pepper flakes: 1 1/2 tsp, for a spicy kick.
06 - Cheddar & mozzarella cheese: 1/2 cup, shredded, for a gooey filling.
07 - Butter: 4 tbsp, for cooking the bread and eggs.
08 - Salt: to taste, for seasoning.
09 - Black pepper: to taste, for seasoning.

Instructions:

01 - Preheat the oven to 400°F (200°C). Lay bacon slices on a parchment-lined baking sheet, rub with brown sugar, sprinkle with red pepper flakes, and bake for 15-20 minutes until crispy.
02 - Use a 3-inch round cutter to cut a hole in each slice of brioche bread.
03 - Melt 2 tablespoons of butter in a skillet over low heat. Add the bread slices and drop an egg into each hole. Season with salt and pepper. Cook for 1-2 minutes, then flip.
04 - Top each bread slice with shredded cheese and the prepared sweet-spicy bacon. Continue cooking until the eggs reach your desired doneness.
05 - Place the bread slices together to form a sandwich, allowing the cheese to melt. Slice in half and serve warm.
