Egg Sandwich (Print Version)
Ingredients:

Thick-sliced brioche bread: 2 slices, for the sandwich base.

Large eggs: 2, for the filling.

Bacon: 5 slices, for sweet-spicy bacon topping.

Brown sugar: 1/4 cup, for caramelizing the bacon.

Red pepper flakes: 1 1/2 tsp, for a spicy kick.

Cheddar & mozzarella cheese: 1/2 cup, shredded, for a gooey filling.

Butter: 4 tbsp, for cooking the bread and eggs.

Salt: to taste, for seasoning.

Black pepper: to taste, for seasoning.
Instructions:

Preheat the oven to 400°F (200°C). Lay bacon slices on a parchment-lined baking sheet, rub with brown sugar, sprinkle with red pepper flakes, and bake for 15-20 minutes until crispy.

Use a 3-inch round cutter to cut a hole in each slice of brioche bread.

Melt 2 tablespoons of butter in a skillet over low heat. Add the bread slices and drop an egg into each hole. Season with salt and pepper. Cook for 1-2 minutes, then flip.

Top each bread slice with shredded cheese and the prepared sweet-spicy bacon. Continue cooking until the eggs reach your desired doneness.

Place the bread slices together to form a sandwich, allowing the cheese to melt. Slice in half and serve warm.
