Fruity Pebbles Bread (Print Version)

Ingredients:

01 - 2 ½ cups all-purpose flour.
02 - 1 teaspoon baking powder.
03 - ½ teaspoon baking soda.
04 - ¼ teaspoon salt.
05 - ½ cup unsalted butter, softened.
06 - 1 cup granulated sugar.
07 - 2 large eggs.
08 - 1 teaspoon vanilla extract.
09 - ¾ cup buttermilk.
10 - 1 cup Fruity Pebbles cereal (plus extra for topping).

Instructions:

01 - Preheat to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper for easy removal.
02 - In a bowl, whisk together flour, baking powder, baking soda, and salt.
03 - In a large bowl, beat softened butter and sugar until light and fluffy (3-4 minutes). Add eggs one at a time, mixing well after each. Stir in vanilla extract.
04 - Gradually add dry ingredients to butter mixture, alternating with buttermilk, starting and ending with dry ingredients. Mix until just combined.
05 - Fold 1 cup of Fruity Pebbles cereal into the batter.
06 - Pour batter into the loaf pan and top with extra Fruity Pebbles. Bake for 50-55 minutes or until a toothpick comes out clean.
07 - Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
