Cookie Sandwiches (Print Version)
Ingredients:

1 ½ cups all-purpose flour.

1 cup Fruity Pebbles cereal (for mixing into the dough).

½ cup Fruity Pebbles cereal (for rolling the cookies).

2 tbsp heavy cream or milk.

Instructions:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking soda, baking powder, and salt.

In a large bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.

Gradually add dry ingredients to the wet mixture, stirring until combined. Fold in 1 cup of Fruity Pebbles cereal.

Scoop small dough balls and roll them in the remaining ½ cup of Fruity Pebbles to coat the outside.

Place the cookies on the baking sheet and bake for 10-12 minutes, or until the edges are golden. Let cool on a wire rack.

For the filling: Beat softened butter until smooth. Gradually add powdered sugar and mix until combined. Add vanilla extract and heavy cream, then beat until light and fluffy. Add cream cheese for a tangy flavor, if desired.

Pipe or spread the filling onto the flat side of one cookie, then top with another cookie to create a sandwich. Repeat with remaining cookies and filling.
