Lasagna Soup (Print Version)

Ingredients:

01 - 1 lb ground beef.
02 - 1 medium onion, chopped.
03 - 2 cloves garlic, minced.
04 - 1 (28 oz) can crushed tomatoes.
05 - 1 (15 oz) can tomato sauce.
06 - 4 cups beef broth.
07 - 1 (12 oz) package lasagna noodles, broken into pieces.
08 - 1 tablespoon dried basil.
09 - 1 teaspoon dried oregano.
10 - 1/2 teaspoon salt.
11 - 1/4 teaspoon black pepper.
12 - 1 cup ricotta cheese.
13 - 1 cup shredded mozzarella cheese.
14 - 1/4 cup grated Parmesan cheese.
15 - Fresh basil for garnish (optional).

Instructions:

01 - In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
02 - Add chopped onion and minced garlic to the pot. Cook until the onion is translucent.
03 - Stir in crushed tomatoes, tomato sauce, and beef broth. Bring to a simmer.
04 - Add broken lasagna noodles, dried basil, dried oregano, salt, and black pepper. Simmer for 10-12 minutes, or until noodles are tender.
05 - Stir in ricotta cheese and let it melt into the soup. Top with shredded mozzarella and grated Parmesan cheese. Simmer for an additional 2-3 minutes.
06 - Garnish with fresh basil, if desired. Serve hot.
