Lasagna Soup (Print Version)

Ingredients:

01 - 1-2 tbsp olive oil.
02 - 1 lb ground beef.
03 - 1 large onion, diced.
04 - 4 garlic cloves, minced.
05 - 15 oz can diced tomatoes.
06 - 15 oz can tomato sauce.
07 - 3 oz tomato paste (1/4 cup).
08 - 4 cups chicken broth.
09 - 1-2 cups water (as needed).
10 - 1 tbsp Italian seasoning.
11 - 1 tsp sea salt.
12 - Black pepper, to taste.
13 - 8 oz bowtie pasta (uncooked).
14 - Toppings: 1/2 cup ricotta cheese, 1/2 cup shredded mozzarella cheese, 1/4 cup grated Parmesan, 1/4 cup fresh parsley, chopped.

Instructions:

01 - Heat the olive oil in a large soup pot over medium heat. Add the ground beef, diced onion, and minced garlic. Sauté until the beef is browned and the onions are softened.
02 - Stir in the diced tomatoes (including their juice), tomato sauce, tomato paste, chicken broth, Italian seasoning, sea salt, and black pepper.
03 - Bring the mixture to a boil. Add the uncooked bowtie pasta and reduce heat to a simmer. Cook for 10-15 minutes, or until the pasta is tender, stirring occasionally.
04 - For serving, stir in or top each bowl of soup with a dollop of ricotta cheese, shredded mozzarella, and grated Parmesan. Garnish with fresh parsley.

Notes:

01 - For a thicker consistency, reduce the amount of water or simmer for longer.
02 - Ground turkey can be used in place of ground beef for a lighter option.
03 - Serve with crusty bread or garlic bread for a complete meal.
