Lasagna Soup (Print Version)
Ingredients:

1-2 tbsp olive oil.

1 lb ground beef.

1 large onion, diced.

4 garlic cloves, minced.

15 oz can diced tomatoes.

15 oz can tomato sauce.

3 oz tomato paste (1/4 cup).

4 cups chicken broth.

1-2 cups water (as needed).

1 tbsp Italian seasoning.

1 tsp sea salt.

Black pepper, to taste.

8 oz bowtie pasta (uncooked).

Toppings: 1/2 cup ricotta cheese, 1/2 cup shredded mozzarella cheese, 1/4 cup grated Parmesan, 1/4 cup fresh parsley, chopped.
Instructions:

Heat the olive oil in a large soup pot over medium heat. Add the ground beef, diced onion, and minced garlic. Sauté until the beef is browned and the onions are softened.

Stir in the diced tomatoes (including their juice), tomato sauce, tomato paste, chicken broth, Italian seasoning, sea salt, and black pepper.

Bring the mixture to a boil. Add the uncooked bowtie pasta and reduce heat to a simmer. Cook for 10-15 minutes, or until the pasta is tender, stirring occasionally.

For serving, stir in or top each bowl of soup with a dollop of ricotta cheese, shredded mozzarella, and grated Parmesan. Garnish with fresh parsley.
Notes:

For a thicker consistency, reduce the amount of water or simmer for longer.
02 -
Ground turkey can be used in place of ground beef for a lighter option.
03 -
Serve with crusty bread or garlic bread for a complete meal.
