Molasses Cookies (Print Version)

# Ingredients:

01 - 3/4 cup unsalted butter, softened.
02 - 3/4 cup light brown sugar.
03 - 1/3 cup molasses.
04 - 2 tsp vanilla extract.
05 - 1 egg.
06 - 2 1/3 cups all-purpose flour.
07 - 1/2 tsp baking soda.
08 - 1/4 tsp baking powder.
09 - 4 tsp ground cinnamon, divided.
10 - 2 tsp ground ginger.
11 - 1/2 tsp ground cloves.
12 - 1/4 tsp ground nutmeg.
13 - 1/2 tsp salt.
14 - 3/4 cup cane sugar.
15 - 16 regular-sized marshmallows.

# Instructions:

01 - Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
02 - In a stand mixer, beat butter and brown sugar until light and fluffy, about 2 minutes.
03 - Add molasses and vanilla extract, mixing until well combined. Then add the egg and beat well.
04 - In a separate bowl, combine flour, baking soda, baking powder, 2 tsp cinnamon, ginger, cloves, nutmeg, and salt.
05 - Gradually add the dry ingredients to the wet mixture and beat until fully incorporated.
06 - In a small bowl, mix cane sugar and the remaining 2 tsp cinnamon to create cinnamon sugar.
07 - Scoop dough with a medium cookie scoop. Flatten in your hand, place a marshmallow in the center, and fold the dough around it to form a ball.
08 - Roll cookie balls in cinnamon sugar and place them 2 inches apart on the baking sheets.
09 - Bake for 11 minutes, until puffed and crinkled with a gooey center. Let cool completely on a wire rack.
