Beef Wellington (Print Version)

Ingredients:

01 - 1 medium onion, chopped.
02 - 1 carrot, chopped.
03 - 1 stalk celery, chopped.
04 - 1 medium potato, chopped.
05 - 4 sprigs fresh rosemary (leaves picked and chopped).
06 - 2 tbsp olive oil.
07 - 2 cloves garlic, minced.
08 - 1 lb 1.6 oz minced beef.
09 - 1 tsp salt.
10 - 1 tsp pepper.
11 - 1 large egg, beaten.
12 - 1 lb 1.6 oz puff pastry.

Instructions:

01 - Preheat your oven to 350°F.
02 - Dice the onion, carrot, celery, and potato into 1 cm cubes.
03 - Heat olive oil in a frying pan over medium heat. Sauté the diced vegetables with chopped rosemary for about 8 minutes. Add minced garlic in the last minute of cooking. Remove from heat and let cool.
04 - In a large bowl, combine the cooled vegetables with minced beef, half the beaten egg, salt, and pepper. Mix until well combined.
05 - Roll out the puff pastry into a rectangle, approximately the size of a small tea towel.
06 - Shape the meat mixture into a log and place it along one long edge of the pastry.
07 - Brush the edges of the pastry with some of the remaining beaten egg. Roll the pastry tightly around the meat log, sealing the ends.
08 - Place the roll seam-side down on a baking tray lined with parchment paper. Brush the top with the remaining beaten egg.
09 - Bake in the preheated oven for 1 hour, or until the pastry is golden brown.
10 - Let cool slightly before slicing. Serve with your favorite gravy.
