Ingredients:

01 - 1 1/2 cups Warm Water (110°F–115°F, for dough).
02 - 1 tbsp Granulated Sugar (for dough).
03 - 2 1/4 tsp Active Dry Yeast (1 packet, for dough).
04 - 4 1/2 cups All-Purpose Flour (for dough).
05 - 1/4 cup Unsalted Butter (melted, for dough).
06 - 2 tsp Salt (for dough).
07 - 1/2 cup Baking Soda (for boiling).
08 - 10 cups Water (for boiling).
09 - 8 oz Mozzarella Cheese (cut into 16 equal pieces, for stuffing).
10 - Coarse Sea Salt (for garnish).
11 - 1/4 cup Unsalted Butter (melted, for brushing).
12 - Optional: Marinara Sauce (for dipping).

Instructions:

01 - In a large bowl, mix warm water, sugar, and yeast. Let the mixture sit for 5–10 minutes until foamy.
02 - Add flour, 1/4 cup melted butter, and salt. Mix until a dough forms, then knead on a floured surface for 5 minutes until smooth.
03 - Let the dough rise in a greased bowl, covered, for 1 hour until doubled in size.
04 - Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper. Bring 10 cups of water and baking soda to a boil in a large pot.
05 - Divide the dough into 16 pieces. Flatten each piece into a rectangle, place a piece of mozzarella in the center, and seal the edges tightly into a ball.
06 - Drop each stuffed dough ball into the boiling water for 30 seconds. Use a slotted spoon to transfer them to the baking sheet.
07 - Sprinkle the pretzels with coarse sea salt and bake for 12–15 minutes until golden brown.
08 - Brush the pretzels with melted butter while still warm. Serve with marinara sauce for dipping if desired.
