Oatmeal Apple Bake (Print Version)

Ingredients:

01 - 1 Tbsp lemon juice: To prevent the apples from browning.
02 - 4 cups Granny Smith apples: Peeled and cubed, for tartness and moisture.
03 - 1/2 cup old-fashioned oats: Adds texture and fiber.
04 - 1 cup all-purpose flour: Provides structure to the bake.
05 - 2 tsp baking soda: For leavening, to make the bake rise.
06 - 2 tsp ground cinnamon: For warm flavor.
07 - 1/2 cup unsalted butter: Softened, for richness.
08 - 1/2 cup granulated sugar: Adds sweetness.
09 - 1/2 tsp vanilla extract: For added flavor.
10 - 1/2 tsp salt: Balances sweetness.
11 - 2 large eggs: For binding and texture.
12 - 1/4 cup apple juice or water: Adds moisture to the batter.
13 - 3/4 cup pecans: Chopped, divided (for mixing and topping).
14 - 3/4 cup powdered sugar: For the glaze.
15 - 1 Tbsp milk: To make the glaze.

Instructions:

01 - Preheat oven to 375°F and lightly grease a 9"x13" baking pan.
02 - Mix cubed apples with lemon juice in a bowl; set aside.
03 - Blend oats to a coarse consistency and mix with flour, baking soda, and cinnamon.
04 - Whisk butter and sugar until creamy; add vanilla, salt, and eggs one by one.
05 - Fold in half of the dry mixture, add apple juice, and then incorporate the remaining dry mixture. Stir in apples and 1/2 cup of pecans.
06 - Pour batter into the prepared dish, sprinkle with remaining pecans, and bake for 25-30 minutes.
07 - Let it cool and apply a glaze made from powdered sugar and milk. Cut and serve.
