Peachy Cheesecake Bites (Print Version)

Ingredients:

01 - 1 cup graham cracker crumbs.
02 - 3 tbsp melted butter.
03 - 8 oz cream cheese, softened.
04 - ¼ cup sugar.
05 - 1 tsp vanilla extract.
06 - ½ cup whipped cream.
07 - 1 cup chopped peaches (fresh or canned).
08 - 2 tbsp brown sugar.
09 - ½ tsp cinnamon.

Instructions:

01 - Combine the graham cracker crumbs and melted butter until well mixed.
02 - Firmly press the mixture into the base of a muffin tin to form the crust.
03 - In a separate bowl, blend the softened cream cheese with sugar and vanilla extract until smooth and creamy.
04 - Gently fold the whipped cream into the cream cheese mixture.
05 - Spread the cream cheese mixture over the graham cracker crust in the muffin tin.
06 - In a medium saucepan, heat the chopped peaches with brown sugar and cinnamon over medium heat until bubbly and caramelized. Let it cool slightly.
07 - Top each cheesecake with the caramelized peaches and, if desired, sprinkle more graham cracker crumbs on top.
08 - Chill the cheesecake bites in the refrigerator for at least 2 hours before serving.
