Rice Krispie Cookies (Print Version)

Ingredients:

01 - 1 cup butter, softened.
02 - 1 cup brown sugar.
03 - 1 cup granulated sugar.
04 - 2 tsp vanilla extract.
05 - 2 eggs.
06 - 2 cups all-purpose flour.
07 - 1 tsp baking powder.
08 - 1 tsp baking soda.
09 - 2 cups rolled oats.
10 - 2 cups Rice Krispie cereal.
11 - 1-2 cups semi-sweet chocolate chips.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a medium bowl, whisk together flour, baking powder, and baking soda. Set aside.
03 - In a large bowl, cream butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy (2-3 minutes).
04 - Mix in eggs and vanilla extract until well combined (about 2 minutes).
05 - Gradually add the dry ingredients to the wet mixture, mixing until just combined.
06 - Gently fold in rolled oats, Rice Krispie cereal, and chocolate chips until evenly distributed.
07 - Use a cookie scoop to place dough balls on the prepared baking sheet, leaving 2 inches between each.
08 - Bake for 9-10 minutes or until the edges are lightly golden brown.
09 - Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes:

01 - Rice Krispies add a unique crispy texture to the classic chocolate chip cookie.
02 - For a chewier texture, slightly underbake the cookies, as they will continue to firm up as they cool.
