Ingredients:

1 lb smoked sausage, sliced into rounds.

4 medium russet potatoes, diced.

1 small onion, chopped.

1 red bell pepper, chopped.

1 tsp smoked paprika.

Instructions:

Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes and season with salt, pepper, smoked paprika, and garlic powder. Cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Remove and set aside.

In the same skillet, heat the remaining olive oil. Add sausage slices and cook for 3-4 minutes until browned. Add onion, red bell pepper, and garlic. Cook for 5-7 minutes until vegetables are softened and slightly caramelized.

Return the potatoes to the skillet and stir. Cook for another 2-3 minutes until everything is heated through.
