Ingredients:

1 cup (200 g) granulated sugar, plus ¼ cup (50 g) for rolling.

½ cup (113 g) unsalted butter, room temperature.

1 large egg, room temperature.

1 tbsp vanilla extract.

½ tsp almond extract (optional).
Instructions:

In a mixing bowl, cream butter and 1 cup of sugar on medium speed until light and fluffy (about 2-3 minutes).

Add egg, vanilla, and almond extract (if using), mixing until fully incorporated.

In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined (avoid over-mixing).

Roll the dough into 2-ounce balls and coat each with the additional sugar. Chill the dough balls in the refrigerator for 30 minutes.

Preheat the oven to 350°F (175°C).

Arrange the chilled dough balls on a parchment-lined baking sheet, spaced 2-3 inches apart.

Bake for 11-12 minutes, or until edges are set and centers are puffy and cracked.
