Cheesecake Donuts (Print Version)

Ingredients:

01 - 2 1/4 cups all-purpose flour.
02 - 1/2 cup granulated sugar.
03 - 1/4 cup brown sugar.
04 - 2 tsp baking powder.
05 - 1/2 tsp salt.
06 - 1/2 cup milk.
07 - 1/4 cup unsalted butter (melted).
08 - 2 large eggs.
09 - 1 tsp vanilla extract.
10 - 1 cup cream cheese (softened).
11 - 1/2 cup powdered sugar.
12 - 1/2 tsp vanilla extract.
13 - 1 cup fresh strawberries (chopped).
14 - 1/4 cup granulated sugar.
15 - 1 tbsp lemon juice.
16 - 1 cup powdered sugar.
17 - 2 tbsp milk.
18 - 1/2 tsp vanilla extract.

Instructions:

01 - In a large bowl, mix 2 1/4 cups flour, 1/2 cup granulated sugar, 1/4 cup brown sugar, 2 tsp baking powder, and 1/2 tsp salt. In another bowl, whisk together 1/2 cup milk, 1/4 cup melted butter, 2 eggs, and 1 tsp vanilla extract. Combine wet and dry ingredients until just mixed.
02 - Spoon the batter into a greased donut pan, filling each cavity about 2/3 full. Bake at 350°F (175°C) for 10-12 minutes or until a toothpick comes out clean. Let cool completely.
03 - Beat 1 cup softened cream cheese with 1/2 cup powdered sugar and 1/2 tsp vanilla extract until smooth.
04 - In a saucepan, combine 1 cup chopped strawberries, 1/4 cup granulated sugar, and 1 tbsp lemon juice. Cook over medium heat until strawberries are soft and mixture thickens, about 10 minutes. Cool completely.
05 - Once donuts are cooled, use a small knife or donut corer to make a hole in the center of each donut. Fill each hole with cheesecake filling and a spoonful of strawberry filling.
06 - Mix 1 cup powdered sugar, 2 tbsp milk, and 1/2 tsp vanilla extract until smooth. Drizzle over filled donuts.
