Cheesecake Donuts (Print Version)

Instructions:

In a large bowl, mix 2 1/4 cups flour, 1/2 cup granulated sugar, 1/4 cup brown sugar, 2 tsp baking powder, and 1/2 tsp salt. In another bowl, whisk together 1/2 cup milk, 1/4 cup melted butter, 2 eggs, and 1 tsp vanilla extract. Combine wet and dry ingredients until just mixed.

Spoon the batter into a greased donut pan, filling each cavity about 2/3 full. Bake at 350°F (175°C) for 10-12 minutes or until a toothpick comes out clean. Let cool completely.

Beat 1 cup softened cream cheese with 1/2 cup powdered sugar and 1/2 tsp vanilla extract until smooth.

In a saucepan, combine 1 cup chopped strawberries, 1/4 cup granulated sugar, and 1 tbsp lemon juice. Cook over medium heat until strawberries are soft and mixture thickens, about 10 minutes. Cool completely.

Once donuts are cooled, use a small knife or donut corer to make a hole in the center of each donut. Fill each hole with cheesecake filling and a spoonful of strawberry filling.

Mix 1 cup powdered sugar, 2 tbsp milk, and 1/2 tsp vanilla extract until smooth. Drizzle over filled donuts.
