Big Mac Tacos (Print Version)

# Ingredients:

→ For the Tacos

01 - 1 lb ground beef (80% lean, 20% fat)
02 - 8 to 10 mini taco shells
03 - 10 slices cheddar cheese
04 - 1 cup chopped lettuce
05 - 1 cup pickles
06 - Salt to taste
07 - Oil for cooking

→ For the Big Mac Sauce

08 - 1 cup mayonnaise
09 - 3 tablespoons ketchup
10 - 1 tablespoon Dijon mustard
11 - 2 tablespoons diced yellow onion
12 - Salt to taste
13 - 1 tablespoon chopped relish
14 - 1 tablespoon white vinegar
15 - 1 tablespoon garlic powder
16 - 1 teaspoon black pepper
17 - 1 teaspoon smoked paprika

# Instructions:

01 - In a bowl, combine the mayonnaise, ketchup, Dijon mustard, diced onion, salt, chopped relish, white vinegar, garlic powder, black pepper, and smoked paprika. Mix everything together until well combined. Put the sauce in the fridge for at least 30 minutes so the flavors can come together.
02 - Heat a skillet over high heat and add a small amount of oil. Place 2 to 3 tablespoons of ground beef in the center of each tortilla. Gently press the beef down onto the tortilla to create an even layer. Sprinkle a pinch of salt on top of the beef.
03 - Place the tortillas meat-side down in the hot skillet and immediately lower the heat to medium-low. Cook for 4 to 5 minutes or until the beef is cooked through and crispy. If your skillet is big enough, you can cook two tacos at a time. Flip the tacos over and cook the other side until it's crispy and golden.
04 - Top each taco with a slice of cheddar cheese while it's still warm so the cheese melts a bit. Add chopped lettuce and pickles on top.
05 - Drizzle the Big Mac sauce over the top of each taco. Serve right away while the tacos are still warm and crispy!

# Notes:

01 - The key is pressing the raw beef directly onto the tortilla before cooking - this creates a crispy beef crust.
02 - Make the sauce ahead and let it chill - this really helps the flavors blend together.
03 - Cook the beef side first on medium-low heat to get it crispy without burning the tortilla.
04 - These are best eaten fresh while the shells are crispy!
