Cajun Potato Soup (Print Version)

# Ingredients:

01 - 13.5 ounces andouille sausage, sliced.
02 - 1 tablespoon vegetable oil.
03 - 1 large onion, diced.
04 - ½ cup diced celery.
05 - ½ red bell pepper, diced.
06 - 2 teaspoons minced garlic.
07 - 1 teaspoon Cajun seasoning.
08 - ½ teaspoon each kosher salt and black pepper.
09 - ½ teaspoon paprika.
10 - ¼ teaspoon cayenne pepper.
11 - 4 cups chicken broth.
12 - 4 large russet potatoes, peeled and cubed.
13 - ½ cup heavy cream.
14 - 1 cup mild cheddar cheese, shredded.
15 - Parsley for garnish.

# Instructions:

01 - Brown sliced sausage in oil, 3-4 minutes. Remove and set aside.
02 - In same pot, cook onion, celery, pepper until soft. Add garlic for 1 minute.
03 - Add seasonings, broth, and potatoes. Simmer 20-25 minutes until potatoes tender.
04 - Return sausage, add cream and cheese. Simmer 5 minutes until heated through.

01 - Adjust spices to taste.
02 - Not recommended for freezing.
03 - Best served warm.
