California Roll Cucumber Salad (Print Version)
A refreshing salad that captures California roll flavors with cucumber, imitation crab, and avocado in a creamy sauce.
# Ingredients:

1 large English cucumber.
02 -
4 imitation crab sticks, diced.
03 -
½ avocado, diced.
04 -
2 tablespoons Kewpie mayo.
05 -
2 tablespoons whipped cream cheese.
06 -
1½ tablespoons soy sauce.
07 -
2 teaspoons toasted sesame seeds.
# Instructions:

Cut cucumber into ⅛ inch thick rounds using mandolin or knife.
02 -
Place cucumber, crab and avocado in large container.
03 -
Add mayo, cream cheese and soy sauce.
04 -
Add sesame seeds, cover and shake to mix well. Serve immediately.
