Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.

In a bowl, mix the graham cracker crumbs, melted butter, and ¼ cup sugar. Press this mixture firmly into the bottom of the pan to form a crust. Bake for 10 minutes, then let cool.

In a large bowl, beat the softened cream cheese until smooth. Add 1 cup sugar and 1 tsp vanilla extract, and blend well. Add the eggs one at a time, beating after each addition. Stir in the sour cream and lemon juice until fully combined.

Pour the cheesecake mixture over the cooled crust in the springform pan.

Bake the cheesecake for 55-65 minutes, until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool slowly.

Bring the cheesecake to room temperature, then refrigerate for at least 4 hours or overnight.

To make the cherry topping, cook the cherries, ½ cup sugar, cornstarch, water, and 1 tsp vanilla extract in a saucepan over medium heat for about 5-7 minutes, or until the sauce thickens. Let cool.
