Chewy Granola Bars (Print Version)

# Ingredients:

→ Base Ingredients

01 - ¾ cup creamy peanut butter
02 - ½ cup honey
03 - 2 tablespoons coconut oil (solid)
04 - ½ teaspoon salt (adjust if using salted nuts/PB)
05 - 1½ teaspoons vanilla extract

→ Dry Ingredients

06 - 2 cups old-fashioned oats
07 - ¼ cup shredded coconut
08 - ¾ cup roasted and salted cashews

→ Mix-ins

09 - 6 tablespoons mini chocolate chips, divided
10 - 6 tablespoons mini M&M's, divided

# Instructions:

01 - Line 8x8 or 9x9 inch baking pan with parchment paper, leaving overhang for easy removal.
02 - Heat peanut butter, honey, and coconut oil in pot over medium heat until melted. Simmer 1 minute, stirring constantly. Cool 3 minutes, then stir in salt and vanilla.
03 - Chop cashews coarsely. Mix in oats, coconut, and cashews. Let cool 15-25 minutes until just warm. Stir in ¼ cup each of chocolate chips and M&M's.
04 - Press mixture very firmly into prepared pan using measuring cup base. Sprinkle remaining chocolate chips and M&M's on top, pressing gently.
05 - Refrigerate 1 hour. Lift from pan using parchment and cut into 12 bars.

01 - Press mixture very firmly for bars that hold together well
02 - Use warm knife for clean cuts
03 - Can adjust wet/dry ingredients if mixture is too wet or dry
04 - Keeps in fridge for 1 week or freezer for 6 months
