Chocolate Marshmallows (Print Version)

# Ingredients:

01 - 1/4 cup confectioner's sugar.
02 - 1/4 cup cocoa powder.
03 - 27g gelatin powder (9 teaspoons).
04 - 1/2 cup water for gelatin.
05 - 1/3 cup Dutch cocoa powder.
06 - 1/3 cup boiling water.
07 - 1 tablespoon vanilla extract.
08 - 1/2 teaspoon instant coffee.
09 - 2 1/4 cups white sugar.
10 - 1/3 cup corn syrup.
11 - 1/4 cup water for syrup.
12 - 1/4 teaspoon sea salt.

# Instructions:

01 - Grease 8-inch square pan with butter. Mix confectioner's sugar and cocoa powder.
02 - Mix gelatin with water in stand mixer bowl. Let sit 10 minutes.
03 - Mix cocoa powder with hot water until smooth. Add vanilla and coffee.
04 - Heat sugar, corn syrup, salt and water to 255°F. Don't stir, just swirl pan.

# Notes:

01 - Let marshmallows cure 6-24 hours before cutting.
02 - Store in airtight container up to 2 weeks.
03 - Perfect for hot chocolate or gifts.
