In separate bowls, set up the dipping stations: one with flour, one with beaten eggs, and one with shredded coconut.

Dip each pineapple piece first into the flour, then into the beaten eggs, and finally coat it with shredded coconut.

Heat vegetable oil in a deep frying pan to 350°F (175°C). Fry the coconut-coated pineapple pieces in batches for 2-3 minutes per side, or until golden brown. Drain on paper towels.
