# Ingredients:

01 - 6 large eggs.
02 - 2 cups cottage cheese.
03 - 1 cup shredded cheese.
04 - 1 cup chopped spinach.
05 - ½ cup diced bell pepper.
06 - ½ cup chopped onion.
07 - ½ teaspoon garlic powder.
08 - ½ teaspoon onion powder.
09 - ½ teaspoon salt.
10 - ¼ teaspoon black pepper.
11 - Fresh herbs for garnish (optional).
12 - Sliced tomatoes or avocado for garnish (optional).

# Instructions:

01 - Preheat oven to 350°F. Grease 9x9-inch baking dish.
02 - Whisk eggs in large bowl. Stir in cottage cheese until incorporated.
03 - Mix in spinach, bell pepper, onion, and seasonings until combined.
04 - Fold in shredded cheese, reserving some for topping if desired.
05 - Pour into dish, top with reserved cheese. Bake 40-45 minutes until set and golden.
